This weekend I invited a couple friends over for a last minute girls night to enjoy some time together and to watch the movie “Sparkle.”  I ran to Walmart to rent the movie from Redbox and grab all the ingredients I needed to make some finger foods and sweet treats for us to enjoy.

I decided to make a sparkly dessert- Strawberry Cream Cheese Cupcakes. Not only were they absolutely divine but they were really easy & affordable to make!  I found the recipe on but I changed it up a little bit as you can see below from the ingredients and instructions.

You can view the ingredients and directions for the Recipe on this post here.

Look at all the yummy cream cheese and strawberry goodness oozing out of the middle of that cupcake! These were so good!  One thing to keep in mind when you make them, be sure to put more cake batter over top of the cream cheese & strawberries. I had a few that I did not get enough batter on top of and the middle basically fell in so they looked more like craters than cupcakes. I just filled the hole up with more of the icing on those cupcakes. 😉

I also served some chicken salad sandwiches. I purchased the chicken salad in the deli at Walmart. I had already bought some wheat rolls at Sam’s Club earlier in the week. I just cut the wheat rolls with a bread knife and put a nice spoon full of the chicken salad on them. (I also always add some light mayonnaise to the store bought chicken salad as I think it just tastes much better with a little more mayonnaise.)  One thing that is perfect to serve on a cool winter night is hot chocolate!  Walmart had boxes of Nestle® Hot Chocolate with mini marshmallows for just $1 too!   I was excited to get to use some new serving pieces I had just received. I thought my table just looked so pretty, especially with the cupcakes in the two tier stand.  I don’t get use my nice china or tableware too often, so it is fun to get to play grown up and use them from time to time. 🙂

I also couldn’t resist the stocking stuffer aisle and picking up a couple little goodies to make treat bags for my girls too. Every party needs a party favor right?  I purchased some sugar plum body butter and some mini zipper pouches with owl designs on them for only $1 each!

I only spent around $20 for the ingredients for the cupcakes, sandwiches, hot chocolate, the items for the goody bags and the Redbox rental!  We had a great time and everyone enjoyed the movie and especially the cupcakes! Thankfully there were several cupcakes left over for me to enjoy the rest of the weekend too. (I did share some with my family, they loved them too!)

You can view my Google+ album here to see all the steps to make the cupcakes.

What do you think about these cupcakes?  I would love to know what your favorite treats are to fix for your girl’s nights too and if you have seen the movie “Sparkle” what you thought about it! Feel free to comment below and share this recipe with others, I appreciate it!
